An aged grappa from the Villa de Varda distillery, which is found in the Trentino region of Northern Italy.
This grappa is made with pomace of the Teroldego grape, which grows local to the distillery in the Trentino region. The grape has a long history, and is a relative of Syrah. It is known to produced spicy, fruity wines with a good level of acidity.
Villa de Varda make a point of collecting their pomace extremely fresh, with some wine still present. This pomace is then fermented using the distillery’s specially selected yeasts, and distilled in their traditional copper discontinuous stills. The grappa is then aged for a minimum of three years in medium charred French oak barrels, producing a flavoursome final product.
This bottling offers up notes of spicy oak, milk chocolate, vanilla, coffee, honeysuckle, cinnamon, cola, raspberries and redcurrant, dried fruits, clove, cardamom and chopped herbs.
A complex and well balanced grappa, this makes for a great alternative to rums and whiskies.
