A specially selected grappa from the Villa de Varda distillery, found in the Trentino region of Northern Italy.
This aged grappa is selected by the Dolzan family, who continue to manage the distillery. ‘Più’ is Italian for most, or best, designating this grappa as amongst the finest that Villa de Varda have produced.
Villa de Varda use extremely fresh pomace, which is sometimes with some grape juice remaining. For this bottling they’ve used Moscato Giallo, Traminer and Muller Thurgau pomace from the Valle di Cembra, Valle dei Laghi and Piana Rotaliana areas of Trentino. They ferment with carefully selected yeasts, and distill in traditional copper discontinuous stills. The grappa has been aged in oak barriques, with a medium char, producing a well balanced and flavoursome spirit.
The result is a grappa with flavours of funky pomace, oak, vanilla, spice, red berries, apples, flowers, grapes, green wood and hay.
