A delicious grappa from the Villa de Varda distillery, found in the Trentino region of Northern Italy.
For this aged grappa, they have used pomace of the Glera grape, originally of Slovenia but best known for being used in the production of Italian Prosecco.
The pomace has been fermented with specially selected yeasts, distillation then occurs in traditional copper discontinuous still, and the spirit is then aged for a minimum of three years in toasted barriques.
The result is a well-balanced grappa, with just enough maturity to round off the spirit without overwhelming the flavour of the grape. The final product is a rich and warm grappa, with notes of almond, orchard fruits, vanilla, walnut, fresh bread, honey, sultanas, sweet grapes, grilled pineapple, toffee, and pressed flowers.
