Another excellent grappa from the Marolo distillery, forming part of their Doppio Fusto (double wood) series.
This series takes a look at the effects of double maturation on grappa. Whilst double maturation is fairly commonplace in other industries, particularly that of Scotch whisky, it remains far rarer in the grappa world. Indeed, Marolo have used a wood not available to Scotch distillers under the rules of the SWA: chestnut. This features alongside the more standard oak, and imparts a unique flavour to the spirit.
The grappa begins life as pomace of the Sangiovese grape, used to make Brunello wine. The distillery has sourced their pomace from smaller scale vineyards in the Gotha area of Brunello, in Tuscany.
This pomace is distilled gently in bain marie alembic stills, retaining the pomace’s delicate flavours.
The maturation in small oak and chestnut casks has produced a grappa of real depth and complexity. Drinkers should expect flavours of almond, roasted chestnut, hazelnut, fresh berries, cocoa, grapes, toffee, slight coffee, oak, cinnamon, cloves and nutmeg, liqourice and anise.
