A flavoursome grappa from the Marolo company, based in the Piedmont area of Northern Italy. Marolo bottle grappas that illustrate the different terrior of grapes available in the nation.
This grappa has been made using pomace from Amarone grapes, specifically the Corvina, Corvinone and Roninella varieties. The pomace is selected from small producers in the Valpolicella region who share Marolo’s artisanal ideals. This pomace is gently distilled in Marolo’s bain marie stills, to ensure that the fragrant qualities of the grape are preserved. The spirit is then matured in oak tuns that previously held another Valpolicella wine, Recioto bianco. This ensures that the grappa’s sense of terrior is uncompromised – a testament to Marolo’s attention to detail.
Amarone wine, from the Veneto area, is known for being dry and spicy, a result of the raisining process. This process of drying grapes on bamboo frames creates a wine rich in sugars, which are then transformed into alcohol, producing a robust and slightly bitter wine.
The same is true of the grappa, which opens with spicy, dry notes of raisin, cherry and red grape, before some green wood, oak, vanilla, almond, balsamic, strawberry, hazelnut, mint, anise and toffee flavours slowly appear.
Marolo Grappa di Amarone is bottled at 45% ABV.
