A fantastic Bajan rum bottled by Plantation, and one of the bottlings that made their name. This rum is aged in ex-bourbon barrels in the Caribbean, before being shipped over to Cognac for further maturation in smaller oak barrels. This process adds another layer of complexity to the rum, bringing oaky vanilla flavours in addition to the natural sweetness of rum and the tropical fruits of bourbon casks. These smaller casks also mean that the ratio of wood to spirit is higher, making for a speedier aging process and creating a rum with complexity beyond its years. Plantation say that they were inspired by an 18th Century method of double aging. A fabulously estery artisan Bajan rum from a brilliant company.
