A delectable rum from Plantation’s Black Cask series, this time round containing spirit from Barbados and Peru.
This bottling contains a combination of spirit from West Indies Rum Distillery (Barbados) and Destilerias Unidas de Peru, distilled in both Column and Pot Stills. The rum is made with a base of molasses, which has been fermented for up to four days.
After distillation, this rum was aged in the tropics for between 1 to 3 years in Bourbon casks. It was then transferred to France, where it was aged for a year in small toasted Ferrand Cognac Casks.
The rum contains 85 g/hl of volatile substances, of which 25g/hl are esters. It was dosed with 20g of sugar per litre.
The result is a rum that delivers note of vanilla, honey, pressed flowers, a little funky molasses, light wood smoke, nutmeg, dark chocolate, toffee, toasted coconut, white peaches, bananas and charred oak.
