A big, one liter bottling of this top quality Genever from Dutch distillery Zuidam.
The base malt wine – an grain eau de vie – is distilled from eaqual parts rye, maize and malted barley. These grains are ground by Zuidam’s traditional windmill – a decision which is not just sentimental – this old fashioned way of milling grain heats the cereals less than modern techniques, ensuring their subtle flavours are not lost.
Each grain provides its own unique characteristic: the corn brings sweetness, the malted barley offers depth and texture, and the rye adds spice. The spirit is distilled no less than three times in a small copper pot still. A small portion of this spirit is then redistilled with botanicals including aniseed, liquorice, and juniper – from which Genever takes its name. The two spirits are then combined, before the proof is reduced prior to aging. This Genever has been aged for five years in new American oak barrels.
The result is a spirit that offers up notes of honey, star anise, mixed oaky spice, apples, vanilla, juniper, forest floor, rye spices, malt biscuits and liquorice.
