Old Tom is the style of gin said to bridge the gap between the fresh and crisp dry gin and the rich and flavourful Genever. Firstly distilled in a traditional copper pot still, it is then distilled again, this time along with 10 botanicals: juniper, angelica, iris root, coriander, elderflower, sweet orange, lemon, liquorice, and cardamom, and vanilla, all of which are sourced from all over the world. Once distilled, the gin is left to age for a brief period in American oak barrels, just as Old Tom Gin was in the 1800’s.
