Rum, long associated with pirates, buccaneers and mavericks, already has a pretty spicy history, yet this style kicks things up a notch! Rum and spice have been combined for many years with "bumbo", one of the earliest rum-based drinks, employing liberal use of both nutmeg and cinnamon. Yet, this was traditionally done to mask a poor spirit, but now spiced rum is a veritable and respectable variety in its own right!
In recent years, the style has exploded in popularity, and at least one bottle of spiced rum is found behind most bars. Sailor Jerry’s, Captain Morgan’s and Kraken are particularly well known, yet the craft distilling revolution has not escaped spiced rum, and many smaller scale operations are producing spirit of exceptional quality. One example is Rumbullion! Which marries high proof rum with the finest spices: Madagascan vanilla, cardamom, cloves and cinnamon. These spiced rums can add another level of complexity to cocktails, Tiki drinks particularly- a spiced rum Mai Tai is truly a thing of beauty!
