A bright unaged grappa from the masterful Nonino distillery. Nonino are a family owned distillery that have been distilling since 1897.
Vendemmia, the name of this grappa, translates roughly as “grape harvest” and indicates that the grapes used for this spirit were gathered in one harvest year. This bottling uses pomace from the Pinot and Malvasia (Malmsey) grape varieties.
The pomace has been fermented in temperature controlled, vacuum sealed, stainless steel, which prevents oxidation. After fermentation, the grappa is produced in discontinuous copper steam stills. This grappa has not been aged and offers a clear flavour of the grape pomace used.
The bottling offers soft flavours of green apple, dried fruits, apricots, green wood, wine musk, white peach, pressed flowers and gentle vanilla.
Nonino suggest pairing this with lime juice and brown sugar to create their take on the Caipirinha, the Grapinha.
