A grappa from the excellent Nonino company, which is found in the Friuli region of Northwest Italy.

Made using the pomace of selected white and red grapes of the Friuli area, Nonino are judicious to remove the stalks. Production is tied to the quality and success of the individual harvest year.

Fermentation occurs under a vacuum in stainless-steel tanks, to avoid oxidation. The fermented pomace is distilled in discontinuous copper steam stills, very slowly, with the head and tails of the spirit removed. The spirit has then been aged in oak barriques in Nonino’s cellars for 12 months, giving the spirit an amber hue and complex flavour.

The grappa serves up flavours of sweet grapes, slightly funky green wood, oak, white chocolate, vanilla, pastry, flowers and peppery spice.

Best enjoyed at room temperature alongside cheese, chocolate or pâté.
