Another very interesting cask finished rum from Mauritius distillery New Grove.
New Grove continue to use family recipes and sugar cane grown locally to the distillery.
What is so fascinating about this rum is that it has been finished for a year in French Merisier (or, in English, cherry wood) following an initial 7 year maturation in French oak casks. Cask experiments in the spirits world are nothing new, but they rarely use woods other than oak. In fact, in some industries it is illegal to deviate from the oak norm. Not so in the rum business, and New Grove take full advantage with this exciting finish.
The result is a rum that has been shot through with delicious cherry wood flavours. The spirit offers up notes of bright red cherries, grapes, coconut, banana, sweet wood, dried flowers, spice, dried apricots, vanilla, almond, toffee, brown sugar and a little bright sugar cane.
Bottled at 47% ABV and without chill filtration or colouration, this is a full bodied and intense rum.
