Another delicious long aged Barolo from Paolo Marolo, who has been making grappa for 35 years, and revolutionised the industry with his emphasis on traditional methods, single grape varietals and matured spirit.
This bottling has been made with the marc of Barolo Nebbiolo grapes, from the 2006 harvest. The spirit has been matured in oak barrels for 13 years.
The result is a luscious, rich grappa, with notes of tobacco, liquorice, orange blossom, pepper, cloves, anise, oak, toffee, vanilla, white grapes, a little pastry, green wood and slight wine.
Bottled at a cask strength of 53.8% ABV, this spirit is non chill filtered – rather it undergoes “natural stabilisation” where the spirit is exposed to the winter weather.
