A 9 year old grappa from Paolo Marolo and company at the Marolo distillery in Piedmont, Northern Italy.
Produced from pomace of Nebbiolo grapes used to make another Piedmont product, world famous Barolo wine. Marolo source their marc from small scale winemakers who share their artisanal spirit.
The pomace is slow distilled in bain marie stills, before being aged for 9 years in a mixture of former Marsala wine casks and white wine French oak barrels. Both cask varieties are smaller than usual to maximize wood to spirit contact, resulting in a more intense, more mature final product.
This grappa serves up flavours of bursting grapes and red fruit, followed by some peppery earthy spice, liqourice, anise, cinnamon, cloves, vanilla, white wine, oak, prunes and chocolate.
Bottled at 50% ABV, the grappa is full in both flavour and mouthfeel.
Perfectly balanced, this is a characterful grappa that defies its years.
