Yet another spectacular limited edition single vintage rum from the Plantation company.
An excellent rendition of the Spanish style drier rums, this spirit was distilled in multi-column stills in Trinidad, from a base of Molasses. The rum was matured initially for 11 years, before being shipped to France and finished in former Ferrand Cognac casks.
As ever with Plantation, there is a wealth of information available for the budding rum aficionado. This rum was fermented for three days, and after distillation, resulted in a spirit with 525g of volatile substances per hectolitre of pure alcohol, of which 2015 grams per hector litre were esters.
The finished product? A wonderfully complex rum with notes of vanilla, toffee, coffee beans, tropical fruits, sandalwood, baking spices, dried flowers, fresh pastry, toasted nuts and caramelised apples.
Bottled at a generous 51.8% ABV, this rum was a product of just 24 casks.
