Another delicious single-island rum from the Plantation company.

This time round they’ve picked out a 2005 vintage rum from Trinidad Distillers. The spirit was produced from Molasses, and fermented for 4 days. This rum has been distilled in a four column still, producing a pure and dry new make.

This bottling has been aged for 11 years in Bourbon casks in the Caribbean, before a further 2 or 3 years in former Ferrand Cognac casks in France. Esters do feature here, with 180 grams per hectolitre of absolute alcohol, equivalent to a Plummer marque in Jamaican rum.

The final result is a rich and deeply tropical rum with notes of peach, mango, floral honey, vanilla oak, cracked black pepper, baked oranges, lemon, pears, apples, almond, brioche, slight chilli spice, estery banana, Cognac, buttered bread and toasted seeds.

Bottled at 42% ABV, and with caramel colouring added only to a maximum of 0.1% of the final product.

The symbol on the bottle’s box is of an oxen plough, a nod to Trinidad’s agricultural history, whilst the red ibis on the bottle’s neck is a traditional emblem of Trinidad.

An excellent after dinner rum.
