An elegant Peruvian rum produced as a result of a collaboration between Alexandre GabrielMaster Blender at Plantation Rum, and Jorge Luis Rodriguez Parajes, Master Blender at the Cartavio rum distillery.
The bottling is a blend of rums made from molasses, that were fermented for three days, and distilled in multi-column and John Dore-type stills. Distilled in 2006, the rum has been aged for 11 years in 200-liter former Bourbon barrels in the Cartavio distillery’s cellars – which are climate controlled.
The spirit was then shipped across the sea to France, where it finished for three years in 400-litre French oak ex-Ferrand Cognac casks.
The final product is a rum that offers notes of dark chocolate, nuts, vanilla, passion fruit, citrus, pineapple, mango, dried fruit, cinnamon and soft oak.
The spirit is bottled at 47.9% ABV, and is dosed with 8g of sugar per litre.
