A wonderful Cognac of extraordinary balance, from one of our favourite Cognac-estates here at Fine Drams. Jean Fillioux have been family owned since they were founded by Honore Fillioux in 1880. Pascal Fillioux is the fourth generation of the family to manage the estate, and has been at the helm for nearly the last 70 years, recently sharing some duties with his son. The estate has one of the most auspicious locations in the whole Cognac region, found at the heart of the “golden triangle” of the Grande Champagne cru. This area is the most fertile in the whole Cognac region, with the soil possessing a high level of chalk and limestone, meaning the grapes grown here have the perfect level of acidity of creating a flavoursome spirit. This particular bottle carries the title “Tres Vieux”, French for “very old”. The Cognac certainly lives up to the billing, having been aged long and slow in French Oak casks in the estate’s cellars. This is a Cognac that demonstrates the very best of Jane Fillioux, with delicious fruity flavours, complex aromatics and quality throughout. Tremendous work from Pascal and Christopher Fillioux.
