A lovely Calvados from the Chateau du Breuil distillery.
This spirit has been made in the traditional manner, combining cider apples from the Basse Normandie region of France, distilling in small stills, and ageing in oak barrels.
The spirit has been matured in oak barrels for eight years, with a finishing period in smaller American oak Bourbon barrels.
The result is a spirit that offers notes of ripe pineapple, mango, caramel, ginger, oak, apple pie, some fresh herbs, sweet corn, fresh red apples, buttered bread and banana.
More tropical than standard Calvados bottlings, this is an interesting experiment from the team at Chateau du Breuil. L’Insoumis translates as ‘the rebel’ - a fitting name for this break from the norm.
