This bottling was selected by Alain Ducasse, the most Michelin star awarded chef in the world, to be the house Cognac at the iconic ‘Le Jules Verne’ restaurant, found on the first floor platform at the Eiffel Tower.
Produced by the family owned François Voyer estate, who are known for having one of deepest reserves in the region, as they have been distilling their own product since the 1870s. The breadth of their cellars is illustrated by this bottling, which contains eaux-de-vie as old as 60 years, and no spirit less than 40 years old, ensuring it is well worth the Hors d’Age classification.
The spirit has been distilled from Ugni Blanc grapes grown at Voyer’s tiny 28 hectare vineyard in Grand Champagne. Voyer distil their Cognac on the lees, producing a spirit of greater body and character. All spirit is made in two traditional Charentaise albemics, and distilled incredibly slowly, with the distillers carefully honed senses determining when to take the “heart” of the spirit.
François Voyer Hors d'Âge serves up notes of delicate dried flowers, vanilla, mango, peppery spice, cloves, cinnamon, espresso, dark oak, cedarwood, tobacco, toasted nuts, dark toast, white peach, honey, caramelised orange rind, white wine and rancio.
