A superb XO Grand Champagne Cognac from the historic estate of François Voyer.
Found in a small domaine of just 28 hectares of vineyard in the premiere cru of Grand Champagne, François Voyer has a reputation of making some of the finest Cognac in the region. Their spirit is distilled entirely from Ugni Blanc grapes, that are fermented with specially selected yeast strains, depending on the weather.
Distillation occurs on the lees, and very slowly, in two traditional Charentaise alembics. The distiller uses their sense of smell to determine when to take the heart of the spirit. The Cognac is then aged in virgin Limousin oak casks for three years, before further aging in refill Cognac casks. As an XO Cognac, this spirit must have been aged for a minimum of 6 years, though in practice they are aged for far longer.
This dram serves up notes of dark leather, cinnamon, cloves, orange rind, dried sultanas, white peach, apricot, toasted nuts, toasted bread, vanilla, cedarwood, tobacco, dark oak, mango bark, rancio and perfumed flowers.
