A rare style of Mezcal produced from wild agaves.
Made in the village of Charcas in San Luis Potosi state, this Mezcal has been produced with Salmiana Crassispina wild agave – a strain that grows in the lofty plateaus of its home state.
The agave is harvested at full maturation – between 12 to 16 years, and has been milled by traditional Tahona stone wheel. The plants are then cooked in a combination of ceramic oven and stone pits, before being fermented in clay vats with naturally occurring yeast.
The spirit has been distilled in copper pot stills, and aged for 60 days in glass demijohns to allow the flavours to totally integrate. The end product is a sweet, verdant mezcal that brings flavours of apples, pears, green tomato, funky leafy greens, bell peppers, mint, and freshly cracked black pepper.
