A terrific Mezcal from the spirit’s homeland of Oaxaca.
Made with a base of Espadin maguey of the Angustifolio and Potatorum agave strains, this is a fruity and rich Mezcal.
The spirit was produced in the town of Santiago Matatlan, with the agave ground by a traditional Tahona millstone, and cooked in a stone pit over black oak. Fermentation occurs over 72 hours and uses natural, wild yeast strains.
After distillation in old fashioned copper stills, the spirit has been aged in glass for a time, allowing the flavours to full integrate – it remains a Joven style Mezcal though, as it is not aged in oak. The full process is overseen by Mezcalero Javier Mateo.
The final product? A lightly smoky, intensely flavoured Mezcal with notes of vanilla, lavender, succulent agave, mint, bittersweet lime, earth and a little warming spice.
Bottled at a generous 48% ABV, this is a warming, full bodied Mezcal.
