A vividly designed, beautifully made Ensamble Mezcal from Derrumbes.
This artisan production hails from Tzitzio region of the western Mexican state of Michoacan. The spirit is made from two kinds of Agave – the tropically flavoured Cupreata, and the funky, intense Inaequidens. The agave for are black-oak roasted in large pits lined with volcanic rocks, before being mechanically shredded.
After a combination of clay pot and wooden tank ferment (which is performed underground), this mezcal was distilled in a copper pot still using a unique and traditional method, overseen by Maestro Guadalupe Perez.
The end result is a mezcal that offers notes of rich roasted agave, lime juice, ripe pineapple and peach,, funky aloe, chilli, black pepper, fresh green herbs and a little toasted wood.
