Once again the fine folks at Walsh Whiskey have served up a cracking cask finish addition to their Writers’ Tears range.
This bottling is made with a blend of triple distilled single pot still and single malt whiskey, matured initially in former Bourbon barrels, before being finished for nine months in Deau XO Cognac casks. These barrels held Cognac for up to 15 years, giving the casks plenty of time to soak up delicious Cognac-y flavours!
Deau Cognac is produced by the Legaret family, and the casks have been constructed at the Allary cooperage.
The final result is a dram that perfectly balances the classic grassy, cereal notes of Irish whiskey with the bold fruitiness of the Cognac. This whiskey serves up notes of peach poached in red wine, red berries, white grapes, citrus rind, vanilla, grassy cereal sweetness, toasted malts, rancio, old oak, leather, liquorice and slight tobacco smoke.
Bottled at 46% ABV and without chill filtration, this a full bodied and delicious whiskey.
A great option for the Cognac lovers out there.
