Another whisky in a series of excellent cask finishes from West Cork distillery, one of the newer whiskey companies in Ireland. This particular bottling sees single malt Irish whiskey placed in American oak former Bourbon barrels, before a finishing period in rum casks. Rum cask whiskey is something of a rarity, particularly in the Irish industry, so drinkers should take this chance to try a very interesting dram indeed. On the nose, this is a whiskey rich in tropical fruits, nuts, Christmas spice and vanilla, with a little ester-y rum notes and aromas of dense oak cask. The palate is grassy and vanilla led, with a creamy mouthfeel, a slight wood spice and warming rum notes of burnt sugar and bananas. The finish is long, with lasting vanilla and cream. A top-quality Irish single malt, bottled at 43% ABV.
