A top-quality Cask Strength Irish whiskey from the wonderful people over at West Cork Distillers. Since 2003 West Cork have been producing some excellent whiskey, yet drinkers have waited patiently to try their tremendous spirit at Cask Strength. This whiskey is a blend of 33% malt and 66% grain, aged initially in first fill former Bourbon casks, imparting a lovely sweetness, before a marrying period in “exhausted Irish whiskey casks” for 6 months. Whilst this might not sound like it would have much effect on the whiskey, it allows the flavours to fully integrate, and is employed by very many whiskey blenders around the world. On the nose, this whiskey is punchy and peppery, with a light floral note, a touch of golden malt, some strong vanilla and a little toffee. The palate is hot and spirituous, but still eminently drinkable, with the same floral notes of the nose accompanied by sweet, spicy vanilla, a little cereal sweetness, toffee and salted caramel. The finish is long and lingering with a classic Irish grassy flavour. An outstanding whiskey, balancing power and flavour perfectly.
