This rum has been distilled in a column still from fermented sugar cane juice,
Alligator has been aged in French oak barrels for four years. These barrels have undergone a considerably heavy char, giving the oak a pattern like an alligator’s skin (long time spirits fans will remember Islay distillery Ardbeg experimenting with something similar back in 2011). These char creates deep fissures in the oak that allows the spirit to penetrate more deeply into the interior of the wood, ensuring a greater interaction with the oak and intensity of flavour.
The final product is a deep, spicy rum which serves up notes of caramelised lime rind, toffee, dark chocolate, espresso, vanilla, charred oak, woodsmoke, treacle, grassy cane, cinnamon, smoked pineapple and mango.
Bottled at a warming strength of 45% ABV, this is a satisfying and deeply flavoured rum.
