A very interesting gin indeed, taking its muse from a style of gin popular during the 19th century, this gin has been barrel rested in old Scotch whisky barrels for three weeks, giving it a slightly amber hue. This process has also worked wonders on the taste of the gin adding spicy notes, and rounding off some of the edgy, spirity flavours found in Gin. This richer, slightly oaky style of gin would be ideal for matching with good sweet vermouths in drinks like the Martinez or the Gin & It.
