There are a wide array of casks in which gin is aged, and in this case we think Filliers chose one of the more interesting types. For this expressions, they took their Classic gin and aged it for several months in medium-charred, Limousin oak ex-cognac barrels (300L). Barrel ageing is known to “tame” the gins flower and citrus-y character, thus giving it a rounder taste with a touch of soft vanilla, which is certainly true in the case of this gin. It picked up a gold medal at the World Gin Awards in 2015.
