A rum expression that has only recently become available in Europe, after rumours of its excellence and existence had returned with visitors to the isle of Barbados. Distilled at the Foursquare distillery, which also produces R.L. Seale Rum and Rum Sixty-Six. Foursquare is based in 8-acre former sugar plantation, nestled in the verdant countryside found in the south of Barbados. Richard Seale, the master distiller of Foursquare, has somewhat shaken up perceptions of Bajan rum through his use of interesting cask finishes. Seale also refuses to add any extra sugar to his rums.
Doorly’s 12 is a testament to Seale’s meticulous techniques, with a complex fermentation and a fine blend of different styles of rum. Here, the rum is a mixture of both pot and column stills, with the pot still spirit bringing depth of flavour, and the column still bringing aroma and poise. 90% of this rum has been aged in former Kentucky Bourbon casks, with 10% aged in Madeira casks, both quantities being aged for 12 years. The rums are then married together for an additional period to allow the flavours to mesh to their full potential. Doorly’s 12 Year Old is presented in a characteristically vibrant Caribbean style, adorned with a colourful (and sadly now extinct) Spinx Macaw on the label, and a handsome black box featuring palm leaves. This rum is rich in tropical and dried fruit flavours, with a huge hit of banana and caramel on the palate. The finish is long and creamy, demonstrating the excellent quality and value of this fabulous rum.
