A fascinating release from Balcones, a distillery found in Waco, Texas.
True Blue is made with blue corn (maize) which is more commonly found in tacos or tortilla chips than whiskey! A straight corn whiskey, there is no malted barley or rye in mashbill, offering a pure flavour of the base grain.
Distilling blue corn is rather perilous process, as the high proportion of oil it contains combined with the heat of distillation can have explosive results. Nevertheless, the final result is certainly worth the danger, as it is a truly delicious and intense whiskey.
True Blue offers up flavours of rich toasted spice, particularly cinnamon and nutmeg, alongside fresh biscuits, chocolate cake, buttery vanilla, brown sugar, popcorn, custard, banana, roasted nuts, some dried flowers, cornbread and a little chilli heat.
Bottled at 50% ABV and without colouration, this is a whiskey rich in body and flavour.
As the Australians say, True Blue is certainly “fair dinkum”.
