A fascinating bottling from Toutain.
Whilst Toutain are extremely traditional in their approach to spirit making, this is a rather innovative bottling. L’Innocente is not technically a Calvados, as by law Calvados must be aged for a minimum of three years, but this stuff is essentially unaged Calvados, or eau-de-vie blanche.
Toutain grow their orchards in the traditional, haute tige “high stem” style, using organic methods. The cider is fermented naturally, without additional yeast, and allowed to ferment and mature for up to 18 months prior to distillation. This bottling has been made with 70% sweet apples, 20% bitter-sweet and 10% “acid” or tart apples.
The spirit offers up flavours of pure apple, with notes of vivid tart apples, caramelised apples, peppery spice and flowers.
L’Innocente’s name is inspired by its white colour, as white is traditionally the colour of innocence. The bottling was created after many requests from bartenders for a Calvados which was mixable, yet also able to be served over ice.
A wonderful tool in any bartender’s repertoire.
