A superb well aged Calvados from this traditional producer.
Toutain have been producing spirit since 1921, and are family owned (now in their 5th generation). Toutain are devoted to the old fashioned way of doing things: they continue to grow their orchards in the traditional “haut tiges” or high stem method, which sees the trees grow taller than normal. The orchards are all fully organic, with 20 different varieties of apple grown.
The cider is also naturally fermented for long periods, without any added yeast. It is only distilled after it has been full fermented and matured for up to 18 months. Toutain like to maintain the flavour of the fruit in their spirit, and so season their barrels with cider to ensure the oak doesn’t overwhelm the Calvados.
This bottling has been matured for 15 years, and offers up tremendous flavours of toasted spice, hazelnut, crunchy green apple, dry cider, caramelised apples and dried fruits, piney forest floor, cedar wood and buttery oak.
