A youthful and delicious Calvados from Toutain, who are now in their 5th generation of family ownership. Indeed, Toutain date back to 1921 (and earlier in a non-commercial operation).
Toutain are meticulous traditionalists. They allow their trees to grow tall, in the “haut tige” or high stem style, a method of growing orchards which is becoming increasingly rare. The orchards are also grown organically. The cider is fully fermented (without added yeast) and aged for between 6 to 18 months before being distilled, whilst new barrels are seasoned with cider so as not to overwhelm the spirit with oak flavours. No added colourants or sweeteners are used in their Calvados.
This bottling has been aged for just three years, and offers an intense flavour of the fruit itself, with restrained oak influence. Drinkers can expect precise flavours of apple peel, funky cider, tart green apples, baked apples, cinnamon, slight sweet oak and a little earthy spice. Dry and refreshing.
A great after dinner dram, this would also work well as a base for autumnal cocktails.
