Another superb release from the Italian distillery, who continue to impress with their young-yet-delicious single malts. This is another fantastic small batch release, produced in the Far-Northerly Italian distillery’s cubic still-house. This whisky celebrates the produce of both Italy and Spain with its name reflecting the Spanish word for “sun”. This is because the spirit is partially matured in Spanish sherry casks. Puni illustrate the crucial role that the sun has to play in producing sherry: “the grapes are dried under the hot Spanish sun, concentrating their sweetness. The wine from these grapes is then aged for many years in frequently changing oak casks. This ancient maturation method is called Solera [whilst this word sounds similar to “Sol” it actually means “base”, referring to the constantly updated base of casks in the system].” Specifically, Puni use the sweet Pedro Ximénez sherry casks to mature their whisky for two years, after two years in first-fill Bourbon barrels. The result is a tremendously complex drink full of spirituous sweet flavours, sweet dried fruit and vanilla notes. The whisky is bottled at 46% and without chillfiltration or colouration, and as always with Puni, it is presented in a handsome bottle which reflects the design of the stills. A really impressive expression from Puni.
