A high quality rhum agricole from the minimalist Pere Labat brand.
This spirit has been made on Marie-Galante, part of the French Caribbean, at the Distillerie Poisson - the oldest distillery in the island. The distillery was founded in 1860, and is famed for its creole column stills.
Pere Labat is named after Father Labat, a Dominican missionary who brought Charentaise-style distillation over to Marie-Galante from Cognac, where it is commonly practised.
Distillerie Poisson is known for its attention to detail. It makes its rum using four varieties of cane - red, white, blue and grey – including some grown on the estate. But all the cane used is harvested in the traditional manner: hand-cut, and transported by ox-driven cart.
The cane is fermented for 72 hours, and distilled in the famous stills, before being allowed to soften in large open-topped wooden vats.
The result is a fresh, fragrant and floral rum, with notes of sweet sugar cane, lime rind, vanilla, flowers, tomato leaf, a little ripe banana, pineapple, guava, cut grass and lemon juice.
Excellent in cocktails.
