Whilst the angel’s share is common knowledge in the whiskey world, many have overlooked the “Devil”s Cut”. This is the name given to the whiskey that unavoidably soaks into the wood of the cask. Jim Beam have not overlooked the Devil’s Cut however, and developed a means of reclaiming some of this whiskey from the cask. They then blended this fiendish spirit with their regular 6 year old whiskey. The result is an intensely woody bourbon, with beautiful tannic flavours of red wine and stewed tea, alongside the typical bourbon sweetness. This bourbon makes one of the best Manhattans around, but is equally delicious drunk neat.
