A delicious Irish whiskey that is the product of partnership with the Cotton Ball brewery of Cork.
Hyde gave Cotton Ball former Bourbon casks to age their five grain Irish stout in for three months. Once Cotton Ball had finished maturing their stout, the casks were returned to Hyde, who used them to finish their triple distilled Irish whiskey for a further six months.
This whiskey contains 75% four year old single grain whiskey, which was previously aged in former Bourbon casks, and 25% four year old single malt Irish whiskey, aged initially in an ex Oloroso sherry butt and then finished in the stout cask.
The final result is an expressive, complex dram that serves up notes of grassy malt, grain sweetness, dark fruits, spice, dark chocolate, tobacco, coffee, hops, burnt toast, caramel, dried fruits, vanilla, treacle and old oak.
Bottled at 43% ABV, Hyde No. 8 is presented free from chill filtration, ensuring a fuller, warmer body.
