A classic bottling from Westland distillery. This craft distillery is based in the SoDo neighbourhood of Seattle, and has quickly built a reputation as one of the best malt distilleries in America. Westland practice a meticulous approach to creating whiskey, focusing on parts of the process often neglected by other distillers. This whiskey uses a range of different malts to create a complex flavour profile, these are: Washington Select Pale Malt, Munich Malt, Extra Special Malt, Pale Chocolate Malt and Brown Malt. All of these malts are sourced from the barley fields of Washington state, a verdant area made fertile by plentiful rain and volcanic soil. Fermentation occurs for 144 hours, and uses Belgian Brewer’s Yeast to create a fragrant and delicate beer. The spirit is distilled in potstills and then aged in a mixture of new American oak and first-fill ex-Bourbon casks for at least 24 months. The whiskey is bottled at 46%, and without colouring nor chill filtration. This is single malt whiskey of an extraordinary quality, with a huge rush of custard and citrus on the nose, shortly followed by burnt sugar, cocoa and mixed baking spices. The palate brings fruitier flavours of cherry, mango and pineapple, with a slightly floral edge. The mouthfeel is chewy and creamy, whilst the finish returns the custard flavours with a lingering coffee and nutty note. Tremendous stuff, and at this age, things can only get better.
