A premium artisan mezcal from Topanito.
This bottling is made with Espadín agave, which has to be allowed to reach maturity, after seven years of growth. The hearts of the agave plant, known as “piñas”, are baked in earthen pits for between five and eight days, before being crushed by a traditional tahona – a donkey driven millstone. This mash is fermented with the addition of a small amount of water in open vats, using wild yeast.
The result is a smoky, rich mezcal which serves up notes of burnt wood, charcoal, liquorice, white pepper, green wood, succulent agave, bananas, chopped herbs, sea spray, a little peach and coriander spice.
Extremely impressive, traditionally styled mezcal, perfect for drinking neat, or for adding real luxury to a Mezcal Margarita.
