In 2014, the good folk at Singleton of Dufftown decided to add to their range by creating two non age statement whiskies. This is one of them (with Tailfire the other). As with Spey Cascade, this whisky takes its inspiration from fly fishing, with Sunray being the name of one of the fly lures used in Salmon fishing. This whisky has been aged in former Bourbon American white oak casks, creating a dram of delectable drinkability.
On the nose this whisky is like a freshly baked apple pie, with aromas of cinnamon, baked apple, nutmeg, pastry, brown sugar, toffee and golden syrup. The palate is dense with stewed apples and pears, syrup, chocolate malt and vanilla oak. The finish is short and punchy, with warming woodspice and vanilla. This whisky picked up several awards when released, including a Gold from the International Spirits Challenge, a silver from the Scotch Whisky Masters and a “silver outstanding” from the International Wine and Spirit Competition.
