A wonderful Dominican Rum that has been aged in a solera system for exquisite balance and complexity. The solera system is often seen in Sherry and Brandy production, and involves maturing in a series of barrels. As one barrel is partially bottled, it is refilled with spirit from the next oldest barrel. This rum has been distilled in a column still from molasses, and is a blend of 5, 8 and 12 year old spirit. The nose is thick and heady with lots of dark, brown sugar notes of molasses and treacle. The palate is rich, with overripe bananas, dried mango, toasted oak and vanilla. The finish is long, lingering with vanilla and toasted almonds. A top quality Dominican Rum, which picked up a double gold medal in the 2015 Madrid international rum conference.
