A Hors d’Age (or Extra, Extra Old) Cognac from Pierre Vallet.
This bottling is the first XXO be produced by this highly regarded, family-run Cognac house (operated by the same family behind Château de Montifaud). XXO is the newest category in the Cognac grade system, having been officially added in 2018. Indeed, XXO was the first new category in the Cognac industry since the early days of the 19th century, when the first age grades were established. Bottlings in this age must be at least 14 years old, with the youngest spirit in any blend also having to be aged for a minimum of 14 years. This nascent category of Cognac is likely to contain some extremely fine bottlings, of a superior quality to even the best XOs.
This is one such bottling, made with a blend of extremely old Cognacs from the Grande and Petite Champagne crus. The final result is a Cognac that serves up notes of candied citrus fruit, ripe grapes, vanilla, dried fruits, dark chocolate, old oak, juicy berries, brown sugar, pressed flowers and rancio funkiness.
