A superb Rosé Champagne from the prestigious Lallier house.
This wine is made with parcels of Grand Cru fruit specifically selected for their low yield at the time of harvest – with old vines preferred. Low yield grapes are known to have a higher concentration of flavour. The wine uses both Grands Crus Pinot Noir and Chardonnay grapes, macerated hot in order to extract more colour but without creating an overly tannic wine.
The wine has been aged for a minimum of three years, and is dosed at 8 grams a litre with liquor aged in oak barrels.
The final product is a delicious sparkling Rosé, featuring notes of sweet, spiced citrus, red berries, fresh red grappies, a little lemonade acidity, some pastry and light cherry.
Excellent when paired with shellfish, or red berry deserts.
