A rich, fruity and floral single malt whisky from the Lowland distillery of Kingsbarns.
A Doocot is a Scots name for a dovecote - a place where doves or pigeons are housed.
This is the flagship whisky in the fledgling distillery’s range, and has been using barley grown less than six miles away from Kingsbarns. The spirit has been aged in a combination of former Bourbon barrels, and ex-Portuguese red wine casks which have undergone the STR treatment (shaved, toasted, recharred).
The final result is a dram that offers notes of red grapes, toffee, malt, vanilla, typical Lowland flowers, sweet oak, lemon zest, ripe bananas, white pepper, barrel char, cinnamon, apples and pears.
Bottled at 46% ABV for a little extra body and depth.
