A premium expression of Joseph Carton’s pear eau-de-vie.
The spirit made with specially chosen pears from the first pick (usually reserved for table eating) added to those from the second pick, with both parcels grown exclusively in the distillery’s Burgundy orchards.
These orchards are non-irrigated, meaning that the yield is lower, but the fruits have a greater concentration of flavour.
After distillation, the spirit has been rested for a period of up to five years in glass demijohns.
The final product is an aromatic and intense spirit, with notes of fresh pears, caramelised apples, acidic green pears, perry, golden syrup and subtly oily citrus rind.
