Another excellent Cognac from Jean-Luc Pasquet.
Jean-Luc has been in the business of Cognac production since 1971, when he began working with his uncle Albert. In 1973, he took full management of the family estate, which has been owned by the Pasquets since 1730. Jean-Luc harboured ambitions to create the purest form of Grande Champagne Cognacs, and converted the estate to full organic viticulture in 1998.
Their vineyard is only 7.5 hectares, and is planted with a mixture of 16% Folle Blanche, 8% Montils and 76% Ugni Blanc grapes. The grapes are traditionally handled, being picked by hand and fermented with local yeast strains. No sulphur is to be found at Pasquet, rather they use large tanks to prevent oxidation. The spirit is double distilled in a traditional copper pot still, during the short two month distilling season.
Pasquet Cognac is matured in 400 litre Limousin French oak casks, with this bottling having been aged for 10 years.
The final product delivers notes of rich oak, leather, mahogany, toffee, flowers, sweet grapes, peaches, dried fruits (prunes and sultanas), dark chocolate, spice, peppery warmth, vanilla, tobacco and cedarwood.
