A marvellous whisky produced by the Orkney based Highland Park.
This bottling is the product of a collaboration of three Highland Park whisky makers, Gordon Motion, Max McFarlane and John Ramsay. Three heads are better than one, and the expert distillers came together to explore how Highland Park’s spirit is influenced by oak and cask seasoning.
Three varieties of cask were specially selected by the Whisky Makers to underpin the flavour of this dram: first fill sherry seasoned Spanish oak butts, first-fill sherry seasoned American oak casks, and first-fill ex-Bourbon barrels and hogsheads. A small number of refill casks were also used to temper the final whisky’s flavour a touch.
The final result is a complex, intense and full bodied Highland Park. This dram offers up notes of orange rind, dried fruits, fragrant floral peat smoke, crushed herbs, earthy spice, oak, plums, a little wood smoke, some soft vanilla, apricots, lemon rind and caramelised citrus.
Bottled at 45.1% ABV for a little more power and body, this is a tremendous, fully flavoured dram.
